Savory Rice

1 medium onion, chopped
1/2 c. celery, chopped
2 tbsp. oil (vegetable or olive)
2 c. cooked rice
1 c. reconstituted "Leahey Gardens" gravy mix (mexican, no beef brown or no chicken golden).

Directions:
1. Saute onion and celery in oil until vegetables are tender.
2. Add cooked rice and gravy.
3. Cover and keep on low for 10 minutes, stirring occasionally.
Optional #1: salt/pepper to taste, peas, green beans, mushrooms, legumes.
Optional #2: 1/2 tsp. curry powder

Serves 4 - 6
